1 pound fettuccine
3 tablespoons olive oil
1 clove garlic, minced
3 each scallions, finely chopped with greens
1 teaspoon crushed red pepper flakes
3 each tomatoes, chopped
salt and freshly ground pepper
4 tablespoons lime juice, fresh-squeezed
1/2 cup feta cheese, crumbled
1 1/2 pounds shrimp, peeled and deveined
Prepare pasta as directed.
Heat olive oil in a skillet. Add garlic, scallions and red pepper flakes. Cook for about 3 minutes. Add shrimp; cook for another 5 minutes.
Add tomatoes, salt and pepper; cook for another 5 minutes. Add lime juice and feta cheese crumbles. Heat through just until the cheese softens. Toss together with fettuccine. Garnish with lime.
